Sam's most precious little "Darling" sleeps anywhere he can. He runs through the house all through the night. He likes to run into the newly remodeled bathroom, and stop quickly on the bathroom rug so it slides all over the place. He then likes to lay on the carpet while you are in the Shower and won't move so you have to step all around him. Here he is doing that:
Then when we are asleep, after he has run around the house like he was running the Indy 5000, he sleeps. Between us and also on us. Here he is between us, stretched touching one of us with his head and his legs and tail are touching the other. He looks so peaceful asleep. Wish he did when he was awake, the Holy Terror Himself, Finster.
This cat also likes his stuffed Snowmen. Years ago, our friend Mary Taylor, gave us two stuffed Snowmen for Christmas. Well, Finster adopted them. They are his chew toys, but also his babies. He brings them and lays them on top of us while we sleep. If one of us gets up to use the restroom in the middle of the night, he lays them on our pillows. Then when we come back, there they are. Presents for us. When this first started happening, it was creepy as hell. We didn't know he was doing it. Now it is cute. He just loves us. So special.
News and Goings on in our household and lives. Just putting it out there so people can see we are slightly normal - SLIGHTLY!

Steak and Potatoes with Mushroom Gravy
Well, I love steak. It is one of my most favorite foods. However, because of the fat and cholesterol, we do not eat steak that often. This week we had steak with Masked Potatoes and I made a Homemade Mushroom Red-eye gravy. Most people make their gravies with a packet or open a can. YUCK! That is disgusting especially when making gravy is SOOOOO easy. Here's how ya do it.
First you cook the steaks. We have KC Strip steaks AKA New York Strip. What it is called depends on the part of the country you live in. Sam prefers his Medium while I love my steak mooing, alive and kicking. I like it just between rare and Med. rare. I love it fleshy, bloody, but warm. Most people and restaurants screw my steak up. These are inch and a half thick cut steaks from Sam's Club. I cooked these in my new Iron Skillet mentioned on an earlier post. I use Olive Oil and Butter in the skillet. This raises the smoke point of the oil and adds flavor. The only seasoning on the steak is Lawry's Garlic Salt and Black Pepper. After the steak are done and resting on the plates, as shown above, that is when you start the gravy.
I take one medium onion and slice it, medium thick slices. Then I take some Baby Portobello's and slice them up. Throw them into the skillet directly after removing the steaks. Keep the skillet on Medium-High heat. Stir them around to coat them with the hot juices in the pan.
You then let them cook. The bits stuck on the bottom of the skillet will be released and they will bring with them FLAVOR. When you see the onions starting to really cook, about 2-3 minutes in and you can actually wait 5 minutes, you will want to add in the flour to start a Roux. I usually eyeball it. Sprinkle in the flour a Tablespoon at a time. Using a fork mix that flour in with the skillet mixture. It will start to absorb the liquids and thicken. I used 4 Tablespoon, about 1/4th of a cup of flour. Then let the Roux cook. You must do this as this will cook out the "Flour" taste. Like this:
You can see in the picture right above, it is still sort of liquidy, but you can see how the flour has soaked it up. If you add to much flour, it will get doughy. Fret not. Add a tablespoon of butter and swirl it around. That will loosen it up. Once you see if bubbling, like above, you can stop adding butter. Just do this One Tablespoon at a time and give it time to incorporate. You will notice the color of the Roux starts to darken. This means the flour taste should be gone and Flavor is building. You then want to add cold water. Add 1 cup of cold water and stir it in. Like so:
You can use the fork you used to incorporate the flour or whatever tool you were using. Why wash more utensils if you don't have to right? This will start to bubbly, and if this is too pasty, add some more water, but only do it in 1/2 cup increments. Please, before adding more water make sure you have let it come back to the boil and you have stirred it thoroughly. At this time you want to taste the gravy. If it doesn't already have enough flavor, you can then add 1 bouillon cube or a teaspoon of Beef Base. This is needed sometimes, but not always. Adding at the beginning could lead to an overly salty gravy that nobody will like. I personally like Beef Base better. A Good Gravy will coat the utensil you are using when you pull it out of the liquid. Once you get the consistency you want, let it simmer for 2-3 minutes. Like So:
After than just turn off your heat and serve. Here is what it should look like.
OMG, Steaky and Gravy Goodness!!
If you try making gravy and are successful, let me know if this helped!

Asian Sticky Chicken
Hello,
We had a great meal tonight. Asian Sticky Chicken, Broccoli, and Cornbread Stuffing. Mmm, Mmmm. Well, I took a rather bland Sticky Chicken Sauce, but I dazzled it up and made is Asian. Here is what the finished Product looks like:
Looks good doesn't it. It is lip-smacking good and you will be sucking the glaze off your fingers too. Here is how to make it.

Looks good doesn't it. It is lip-smacking good and you will be sucking the glaze off your fingers too. Here is how to make it.
Ingredients
- 3 -5 pounds bone in chicken with skin (folks usually use legs and/or thighs)
- 1 cup ketchup
- 1 cup honey
- 1 cup brown sugar
- 1/2 cup soy sauce
- 1/2 teaspoon garlic powder (You can use 1 Tablespoon of Freshly minced Garlic if you like)
- 1/2 teaspoon ginger powder (You can used 1 Tablespoon of Fresh Grated if you like)
- 1 1/2 or 2 teaspoons of Asian 5-Spice
Instructions
- Preheat oven to 350.
- In a sauce pot, combine ketchup, honey, brown sugar, soy sauce, garlic powder, ginger, and Asian 5-Spice over medium heat.
- Bring it to a boil while stirring. Let is continue under a rolling boil for a few minutes, no more than 5 minutes. Remove from heat.
- Arrange chicken pieces in 9x13 dish. Pour most of the sauce over chicken, turning pieces with tongs to coat. I would say leave a small ramekin full of the sauce for basting right at the end.
- Place in oven, uncovered, for 90 minutes, turning after 45 minutes.
- Fifteen minutes before cooking time is up, flip pieces once more and baste with sauce.

First week of November 2014
This week flew by. Sam and I have been dealing with a slightly leaky roof. Sam put a tarp up on the roof and that stopped the leak, but we still gotta get it fixed. Had a roofer come and review and he stated he saw hail damage. Had insurance come out on Tuesday of this week and they spotted the Hail damage too, as well as severe wind damage. Needless to say, we are getting a new roof and the insurance comp[any is paying. Whew! We will pay our deductible of $500 and we are paying to upgrade from normal shingles to better ones as well as having a rubber Ice and Water shield put in the first 2-4 feet from the edge.
Today the Roofer came by and I signed the contract to get the work done. Now gotta send that to the insurance company and then they will release the rest of the money for the roof. They are also going to pay to have the ceilings worked on and painted throughout the house. We are not dealing with that yet. One thing at a freaking time.
We will be very happy once the roof is done and then we will go directly into getting the inside painted. Until then we are just glad that the roof is not going to cave the hell in on our heads. Updates as they come.

My New Kitchen Accessory
Got me a new 12 Inch Enameled Cast Iron Skillet. Same Color as my Enameled Cast Iron Dutch Oven. These are the best cooking utensils around. Even heat and great browning results. It huge and heavy. $39 at Sam's Club. What-What!!
Just seasoned it this morning and she is ready for use. So I fried up some Oysters and had a Oyster Po'Boy for lunch today. So Good!
The only thing I want from this line now is the Elongated Enameled Cast Iron Casserole Baking Dish. Big Like a Dutch Over, but Oval instead of Round. That is great for the longer Roasts and for Casseroles. I really don't care if they are the same Blue color. I'll take Red too. One of these days Sam's will have it for the right price. I am not paying the $300+ for the brand - Le Creuset. Sorry, not paying $300 for something I can get for $39. I wasn't the smartest in Economics 101, but I wasn't small bus.
Can't wait to do some pan Fried Pork Chops or even making some Fried Yellow Squash and Onions. Yum-my.

Music for this past week 10/28-31
Hello,
I have had a great week of music. iPod is still working on my songs in the A Column and there have been some from when I was in High School and some real eclectic shit. The list is below along with links in case you wanna listen to some great music.
Sinead O'Connor - All Babies This song is off her album Universal Mother. This was a great album. I was so happy when it came out because after the Pope Picture Ripping episode I thought she was going to be forgotten and fade away into obscurity. She has continued to put out music over the years and I have it all. I have been hooked on her voice since album #1. Listen to this fab song here - https://www.youtube.com/watch?v=EAUxvc0LbiI
Celine Dion - All By Myself I love her remake of this Power Ballad. Originally written and performed by Eric Carmen back in the 70's, Celine remade this song and did it justice. She made this her own song. It was unstoppable. I love Mrs. Dion, listen here and maybe you will too? -
The Cure - All Cats are Grey This song hails from their 1981 album Faith. In typical Cure fashion the song has a haunting feel just below the surface. This song is inspired by the Gormenghast novels of Mervyn Peake. Most of this album was written on the fly while in the Studio recording the album. Have a listen here - https://www.youtube.com/watch?v=hpgNx89B8Y4
Alison Moyet - All Cried Out This song is off her 1984 Debut Alf. Another Soulful song from Alison. "Take back your cold and empty heart" is about the best line to use when someone pushes you away and then wants you back when the grass was not greener on the other side. Love this Song. We have all been here, and if you haven't then someone was singing this song about you - Bitch! Watch the video and listen tot he song here - https://www.youtube.com/watch?v=3wWi6OrgZe4 You took a whole lotta loving for a handful of nothing...PREACH GURL!
Lisa Lisa and the Cult Jam with Full Force - All Cried Out OK, anyone from era that does not remember this song, just needs to crawl back under their rock and stay. Lisa Lisa, so good you have to say it twice. She had some great songs and this is one of them. Listen here -
One Republic - All Fall Down This group has NOTHING to Apologize about. This song is off their 2007 debut album Dreaming Out Loud. This is a good song. it was not released as a single, but it could have. I have found over the years, these guys can write some good songs. Have a listen here - https://www.youtube.com/watch?v=qf6hLhrHtqg
Thompson Twins - All Fall Out This song is off the Twins 11983 Debut Album Quick Step & Side Kick, in America it was just known as Sidekicks. This was the album that gave us the hits Lies and Love on your Side. Every song on this album is good. Find this buy the CD, Download it. Do whatever you have to do to get it. This is such a good album. Of Course, you have to like Synth Pop and love 80's music post Modern New Wave Romantic Pop Music. If you so, get this damn album. The Thompson Twins have NEVER gotten the recognition they so well deserve. Have a listen to this un-released album track here - https://www.google.com/#q=Thompson+Twins+-+All+Fall+Out
Pat Benetar - All Fired Up This song gets you pumped and dare I say Fired up when you listen to it. I have considered her the first lady of 80's Rock N Roll for some time. Every song she sang was powerful and reeked of a strong feminine presence. You knew she was a woman and she also wanted you to know she could kick your ass with her music. We all got it and gladly let her kick our asses. This is one of her great songs. Listen here - https://www.youtube.com/watch?v=PsnYrH3BUP8
Plastik Funk feat. Adam Joseph - All For You. Incredible song. Adam is on point, as usual, with the vocals and the music has some sick beats. You gotta listen to this if you have an affinity for Dance music or Electronic music. Listen here - https://www.youtube.com/watch?v=UG081oIvi68 here is a remix that is also just as SICK - https://www.youtube.com/watch?v=CfgJHoPH2hU
Sister Hazel - All For You I heard this song one day on the radio long ago and was hooked on it. Sang it incessantly in my head for days and did not know who sang this song. It took me weeks to track it down, we didn't have Google or anything like that back then and I was also not on a computer then either. Sounded like Blues Travelers but it wasn't. Finally found out who it is and got the album. This song is off their album Somewhere More Familiar and it is pretty good. Kind of Southern Rock. Not normally my cup of tea, but to this day when I hear this song I sing is and it makes me happy. Have a listen here - https://www.youtube.com/watch?v=J95gaG7MYQY
Tasmin Archer - All Grown Up One Hit Wonder in the USA. Her one Hit is the US is Sleeping Satellites. Tasmin has pure vocal talent. SO naturally in the age of Brittany Spears, she was overlooked. Style overtook talent. Sad Sad. Her album was incredible. Great songwriting and greater vocals. This is off her album Shipbuilding. Have a listen to a talent that just couldn't get noticed enough to stick in the US. Listen here - https://www.youtube.com/watch?v=ytn47tz4PDY
Husikesque - All Hands on Deck DO not ask me how to pronounce the name of this Band or Person. I have had this album for years and while I love it I cannot tell you how to pronounce it. I got this back when I was in College. I was reporting weekly song stats to a college music radio magazine, CMJ (College Music Journal), and I handled Pop and Electronic dance music charting. So I was sent this album for a spin or two. A promo from a little label. It was good. So good I still have it and still listen to this date. Have a listen to this fun artist here - https://www.youtube.com/watch?v=WBe2uw9iF64
Sarah Brightman feat. Cliff Richards - All I Ask Of You Sarah is a staple on Broadway. I first heard of her when she released Captain Nemo. I really liked her voice. Found out much later she was a Broadway Diva. This is off of one of her albums where she is singing Broadway Hits. She does it justice. She just belts out those high notes with ease. Have a listen here - https://www.youtube.com/watch?v=gLtU4IbHHZc
Human League - All I ever Wanted Yes they are Still around. Started in the 70's and still pumping out albums. Good Albums. Have a listen form their 2001 offering Secrets. This song is infections and poppy. It will make you dance in your bucket seat. It does me. Have a watch.
Kelly Clarkson - All I Ever Wanted Another song by Kelly Clarkson. It's good and almost all her songs are. This one was not released as a single. But have a listen here - https://www.youtube.com/watch?v=UArYZacDrSE
Train - All I Ever Wanted I caught the Train and I have not gotten off. Love this group from SF Bay. They are great and I would love to see them live. This song is good and you should listen to it here - https://www.youtube.com/watch?v=DaSPa2KNvjk
Train - All I Hear How good is that. Another Train song and this one is just as good. Telling you, you need to give these guys a serious listen. Become an Uber-fan and listen here - https://www.youtube.com/watch?v=FQyy8NUQB50

Caroline - All I Need (Owen Vallis Mix) This is the only song from this group I have. Haven't found anything else. Like the song. Ethereal and fun. Electronic, kinda Poppy with an Indie twist. Have a listen here - https://www.youtube.com/watch?v=5fzHA3C8JxU
Alanis Morrisette - All I Really Want You had to live under a rock in Siberia, covered in 20 feet of snow not to have heard this in the 90's. Her album was THE album for that year. The Lightning Seeds - All I Want From the 90's. This is off the debut album Cloudcuckooland. Their songs were all light and airy with a touch of Post Modern New Wave to them. The Fixx - All is Fair This is off their album Ink. These Aussies know how to rock. I have been a fan since Red Skies so many years ago. Listen to this little known jem. You can hear it here - https://www.youtube.com/watch?v=C2K9nm07XnA
Bjork - All is Full of Love - This is off 1997's Homogenic, one of her best albums. All of here albums have a concept behind them. Normally only Bjork knows what the concept is. Portished - All Mine These guys burst onto the scene any soon they were compared to everyone. Everyone loved Portished and would just spout off about how good they were, how artistic their music was. Stereo MC's - All night Long When these guys released the ALbum and Song entitled Connected, it went viral before there was something called viral. It was E-V-E-R-Y-W-H-E-R-E. The Beautiful South - Alone This is one of my favorite bands. Theirs songs are moody, descriptive, and sometimes downright blunt. I like that in my music. They have lots of fun music too. This song seems like it was conceived in a smoke filled dive bar. Kinda bluesy. Good Song, have a listen - https://www.youtube.com/watch?v=qYzPmPfNSd8
Cause & Effect - Alone I really liked this band .. Tragedy struck right before this album was to be released. One of the two member band died suddenly and quite tragically. The second album went nowhere and the surviving band member called it quits. He couldn't get over the loss of his bandmate. The album was just as good as their first, which had several top 40 hits. This band should still be around. Have a listen here - https://www.youtube.com/watch?v=4Ffg48poPTI
Celine Dion - Alone I love Celine, but some songs are only meant for its writers. This song should only ever be recorded and released as a singe from HEART. It's such a powerful song that comes from the heart. You really have to feel it. Ann Wilson from Heart put everything into this song when they originally recorded it. Celine's version is OK. It just sounds sort of Karaoke to me. She just shouldn't have. This song is Sacred to Heart and Heart only. You can listen here - https://www.youtube.com/watch?v=BbRfapWaOKk
Depeche Mode - Alone here is another track from their latest album Delta machine. It has a very dark sound, the whole album. The deep bass and pounding beat does that. This is another solid song from Depeche. Listen here - https://www.youtube.com/watch?v=YUZOiQfTeEQ

Tasmin Archer - All Grown Up One Hit Wonder in the USA. Her one Hit is the US is Sleeping Satellites. Tasmin has pure vocal talent. SO naturally in the age of Brittany Spears, she was overlooked. Sarah Brightman feat. Cliff Richards - All I Ask Of You Sarah is a staple on Broadway. I first heard of her when she released Captain Nemo. I really liked her voice.
Kelly Clarkson - Alone Another solid song from Kelly. This is off her Stronger album and it is a good rocking fun song. Listen here - https://www.youtube.com/watch?v=vVKNPeYOTXE
Dokken - Alone Again Still a fan of Dokken all these years later. Don Dokken could really sing. This is from the 80's when Metal ruled. Listen here - https://www.youtube.com/watch?v=1YAjQYJ7PVs
Aqua Timez - Alones Here is another Japanese Group. Love this song. I don't know what they are saying, but the song is still rocking. Many of their songs are so good they have been included in many different Anime Shows. This one was featured as an opening song for Bleach for a time. that is where I heard it. I now have several songs from them and listen to them quite often. Music is universal. These guys rock. Have a listen here - http://youtu.be/mmLZSDfZlFM
for the smaller version they used on Bleach click here - https://www.youtube.com/watch?v=CE6enmnmvGo
